Tonight was my 2nd class at wine school and it was all about the wine making process. Part of that was talking about organic, biodynamic and sustainable wine making practices. I was fortunate to have a sustainable wine provided by Pasternak Wines, the Amisfield Pinot Noir - 2006- Central Otago, New Zealand. The wine was intensely aromatic with typical smokiness and cherry fruit. It had more intense color that most Pinot and exhibited coffee like flavors along with a good long finish. I found it an exceptionally good Pinot. Now, while my palate was exploding with some fabulous flavors the responses from others didn't quite live up to that same expectation. There were comments like "smells like a wet dog" to " tastes like I'm sucking on a penny" that were being voiced. At the same time, we had someone declare it was the most delicious wine they've had for a while. Well, what do you do here? How do you rate a wine like that? Well, it's down to your own palate. And, for me this was a perfect Pinot!
